While traveling in Indochina during the early 1920´s, Henri Boulard, a French microbiologist, encountered an outbreak of cholera among the local population. H. Boulard noticed that certain people drank a special tea, which was made from tropical fruits, in order to stop or prevent diarrhea. The tea's secret ingredients came from a combination of litchi and mangosteen skins. When H. Boulard further investigated his observation, he discovered the effective ingredient was Saccharomyces, a unique strain of yeast that grew at temperatures higher than any other yeast of its kind. Henri Boulard == war ein Französisch Wissenschaftler und Mikrobiologe == in des zwanzigsten Jahrhunderts, die in den 1920er Jahren in Indochina (Halbinsel in Südostasien, jetzt Vietnam), bei der Suche nach einem neuen Stamm von Hefe, die extremen Temperaturen, um standhalten konnte gut zu produzieren Wein entdeckte Saccharomyces boulardii.
Die Hefe Fermentern zu diesem Zeitpunkt bekannt hatte eine Wachstumstemperatur von 21ºC (70ºF oder), aber Boulard suchte etwas beständiger gegen Hitze.
Zu der Zeit gab es einen Ausbruch der Cholera in einem der Dörfer, wo er reiste und er bemerkte, dass die lokale Bevölkerung Durchfall reduziert durch bestimmte Tee mit den Schalen der Frucht gemacht essen genannt Litschi. Boulard verwaltet die Mittel, die für die Behandlung von Durchfall zu isolieren: eine spezifische Hefestamm der Gattung "Saccharomyces", die mit seinem Namen benannt wurde: "Saccharomyces boulardii".
